Blog An Avo Comp: Two weeks to go!

There’s just over two weeks left to enter our ‘Blog An Avo’ competition to be in with a chance of winning £250 worth of supermarket vouchers.
For those of you who don’t know – Chilean Hass avocados are now in season and are widely available in supermarkets across the country. To celebrate, we’re offering one lucky blogger £250 in shopping vouchers.

As easy as ABC…
“We're very fond of avocados in our house - they even have their own special bowl on the kitchen table which is constantly being replenished!
I'm always looking for new ways to incorporate our favourite food into recipes and will dabble at making up recipes; some are successful and become firm family favourites, whilst others are not repeated, despite the gorgeous ingredients!
At the weekends, we often have a brunch and I was thinking about what I could create that was new but included avocados. As we had lots in (as usual!).  I came up with this idea and it was an immediate hit, so now I'm having to make extra on a Sunday so the family can take them in their lunchboxes on Monday too.
ABC Muffins  (or Avocado, Bacon and Cheese Muffins):
Now I'm a bit experimental in the kitchen so don't tend to follow recipes, but this is what to do (roughly!)
Firstly, snip up 2 rashers of bacon and fry until golden and crispy.  Whilst this is cooking, whizz up a ripe Hass avocado in the food processor.  Add 300g of plain flour together with 2 teaspoons of baking powder and whizz again until combined.  Chuck in 30g of chopped strong cheddar cheese, whizz again (are you getting the idea of how simple this is?).  Whizz in 1 beaten egg and 2 tablespoons of yoghurt (plain obviously!) and then enough milk to make the mixture moist but not runny - you should need to give the spoon a shake to get if off.  Add the bacon and whizz quickly just to combine.
Then put the mixture in 12 greased muffin tins and bake in a medium oven (180 degrees) until golden - around 20 minutes.  Remove from tins and allow to cool on a rack.
We love these for brunch when they are still warm - we cut them in half and spread them with more mashed avocado.  They are also great spread with a little butter - that's how we have them in our lunchboxes.” – Rose, via email
