Tweetalong Recipe: Tom Parker-Bowles’ lime marinated prawn and avocado pittas

400 g small Atlantic prawns, peeled
6 mini pitas
4 avocados, mashed
2 red onions, finely chopped
Good pinch, sea salt
Small bunch of coriander, chopped
6 birds eye chillies, chopped/or half a habenero if you want real heat/ or a couple of standard green chillies if you really can't face heat/finely chopped
1 lime, juiced
Fresh black pepper

For marinade

2 limes, juiced
Big glug Tabasco
Sprinkle sea salt

1) Marinate prawns in lime and Tabasco and salt and pepper for 30 minutes.

2) Meanwhile, mash avocados, and mix with chopped chillies, lime juice, coriander and onions. Taste and season as necessary. 

3) Toast pittas, and mix prawns and avocados. Fill the pittas with two big spoonfuls of the mixture and serve
